Product Overview

Freshmix™ Meat Protect is supplied as a co-spray dried free flowing powder of sodium acetate, sodium lactate, and sodium diacetate, making it easy to handle and convenient to store. It is developed as a functional composition aimed at shelf life extension and preservation of meat products.

Because of the synergistic effect between acetate, lactate, and diacetate, this blend is very effective in inhibiting the growth of pathogenic bacteria such as Listeria monocytogenes and ensuring food safety. Furthermore, microbiological tests show that the formulation extends the shelf life of meat products through growth inhibition of total aerobic bacteria.

Mechanism of Action & Key Benefits

Functional Synergy

  • Sodium Lactate: Functions by lowering the water activity (Aw) of the meat matrix, extending the lag phase of bacterial growth.
  • Sodium Acetate & Diacetate: Provide undissociated organic acids that penetrate bacterial cell walls to disrupt internal metabolism and cellular pH.
  • pH Buffering: The blend actively buffers the pH of cooked meat products.

  • Sensory Neutrality: It has no adverse effects on sensory parameters of meat products, as shown by sensory analysis.
  • Application Flexibility: As a free flowing powder, this product can be applied in various processing steps and also in dry blends.

Application & Legislative Guidelines

Freshmix™ Meat Protect is composed of food grade sodium acetate (E262i), food grade sodium lactate (E325), and food grade sodium diacetate (E262ii) conforming to the latest FCC, EU-legislation, and JECFA (FAO/WHO). Dosage levels and allowed applications depend on local legislation, meat type, and shelf life requirements.

  • Standard Dosage: The suggested dosage for optimal effect is 0.65%. In all cases, it is advisable to carry out an initial test so that the precise effects on product properties can be determined.
  • USA Market: USA legislation allows a maximum dosage of 0.65% by weight on the total formulation in various meat and poultry products.
  • Canadian Market: In Canada, up to 1% is allowed.
  • European Market: In Europe, there are no specific regulatory limits, so its usage should be according to the quantum satis principle. It is also approved in pre-packed preparations of fresh minced meat.
